Sri Lankan(Ceylon) Cinnamons

Ceylon cinnamon, derived from the inner bark of various tree species in the Cinnamomum genus, is a popular spice. It adds a warm, sweet flavor and aromatic quality to cooking and baking. Cinnamon is available in both ground form and as whole sticks (known as cinnamon quills)

There are two main types of cinnamon:
Ceylon and cassia.

  • Ceylon, or “true cinnamon,” is native to Sri Lanka
  • Ceylon is tan-brown in color and contains many tight sticks with soft layers. These features provide a highly desirable quality and texture.
  • Ceylon cinnamon is less common and has long been prized as a cooking spice. It is quite expensive compared to the more common cassia variety.

What are the Grades we have?

Alba Cinnamon

Alba Cinnamon is considered as the highest grade of Ceylon cinnamon that is available in the cinnamon market. Since it is prepared by taking the finest and thin inner bark of Ceylon cinnamon tree, in nature, this grade of cinnamon is very rare, and at the same time provides top quality taste of Ceylon cinnamon.

C5 Special

C5 Special is another high-quality cinnamon grade which is available in Sri Lanka. In fact, it can be recognized as the second highest quality cinnamon grade (which is only second to Alba Cinnamon). Similar to Alba Cinnamon, C5 Special is also famous for its character, taste, smell and excellent flavor.

C5

Following C5 Special cinnamon grade, C5 comes as the third highest quality cinnamon type which is available in Sri Lanka. Being smooth and slender in appearance, C5 grade of cinnamon is sweet in taste and deep yellow in color. 

C4

C4 is another cinnamon grade which falls under Continental cinnamon category. Compared to C5 Special and C5, the quality of C4 is quite low. Nevertheless, it is also popular and in demand for its smoothness exquisite fragrance, pale yellow color, and sweet taste.

H1

This is the best cinnamon of Hamburg (H) grade with the lowest quill diameter of 23-24 mm in the grade. H1 possesses a pale brown hue, distinct flavor and scent along with quite coarse texture.  

H2

Ceylon H2 Cinnamon grade is the top-selling grade of H Cinnamon grades. Further, it shows very similar attributes to the H1 Cinnamon grade. And also, this grade has a 90% of golden yellow color and good-quality cinnamon sticks. In addition, buyers prefer H2 Cinnamon sticks grade in whole stick packaging.

Quillings

There are three Quilling cinnamon grades namely, Quillings No.1, Quillings No.2 and Quillings No.3 which result from the bailing process. These three types of cinnamon have been segregated based on the size of their broken pieces where Quillings No. 1 contains the largest broken pieces followed by the other two grades in order.

Off Cuts

This is an off-cut cinnamon grade that comes from cinnamon stick grades. We use different kinds of cinnamon stick pieces to make this grade. In other words, this is a collection of cinnamon grades in various types of cuts.

Cinnamon Leaf Oil

Cinnamon bark oil is produced by steam distilling cinnamon sticks that are smashed or broken The oil is collected through a separator. Cinnamon bark oil has a robust and perfume-like aroma and is reddish-brown in color. In contrast, cinnamon leaf oil has a spicy and musky aroma.
